LDH Kitchenにより運営される、寿司の名店「鮨さいとう」と現代美術ギャラリーNANZUKAとのコラボレーションによるギャラリー併設鮨レストラン。日中はNANZUKAによるギャラリーとして、夜には鮨さいとうの隠れ窟となる転換型の新業態である。内装デザインはニューヨークを拠点とする美術作家のダニエル・アーシャムとアレックス・マストネンによるユニットSnarkitectureによる。

私たちSNARKはローカルアーキテクトとしてSnarkitectureの想像を実現する為の設計を行った。彼らから提出された3Dデータを元にローカライズを行なっていく訳だが、自らデザインをしていないPC上の３Dデータから2Dの図面を作成し、作り方を考え、実物を施工していく過程は、発掘された未知のオーパーツを解読していくような作業である。この設計行為そのものがダニエル・アーシャムのアートワークのコンセプトである“フィクションとしての考古学（Fictional Archeology）”を思わせるようなコラボレーションであった。

 

Operated by LDH Kitchen, this project is a hybrid gallery and restaurant born from a collaboration between the renowned sushi master “Sushi Saito” and the contemporary art gallery NANZUKA. The space functions as a NANZUKA gallery by day and transitions into a secluded sanctuary for Sushi Saito by night. The interior was designed by Snarkitecture, the New York-based duo of Daniel Arsham and Alex Mustonen.

Serving as the local architect, SNARK was responsible for materializing Snarkitecture’s vision. The process of translating their digital 3D models into 2D construction drawings and determining physical fabrication methods felt akin to deciphering “OOPArts” (out-of-place artifacts). This collaborative effort resonated deeply with Daniel Arsham’s own artistic concept, “Fictional Archaeology,” as we bridged the gap between digital fiction and physical reality.
